I know, I know. You might be thinking, nuts? Really, you give us nuts?

First of all, there is butter involved. Enough said there. Then, you add Chimayo NM Red Chile and salt to these little suckers and all of a sudden they are curiously addicting and have disappeared from the bowl. You see, these aren't just nuts. Here is why I luh-uh-ove these. They are quick, easy and deliciously addicting. The salt adds an addictive quality. The Red Chile has a subtle smokiness that makes your eye wrinkle and silently say, huh, to yourself and you immediately feel a need to know what is in the seasoning. Ancho chile powder sings in sweet sweet harmony with the smokey, subdued flavor of the red chile. Then there is the lime. Whether you get fancy and use lime powder or juice a lime and sprinkle a bit of lime zest, the lime wraps all the flavors into a perfect little bundle and makes the whole nutty package sing Fiesta tunes.
This recipe is most definitely versatile! I used almonds here, but you could of course substitute almonds with your favorite nut. Go New Mexican and use piñon or Hawaiian and surf up macadamia. Don't have ancho chile powder? Don't fret! The Red Chile can carry the team on its own or you can play with the recipe and add your own spicy twist.
